If you substitute a carriage bolt for the hex bolt would this work for the grill of a 1960 Willys Wagon?

I have not tried to use on a SW but it would probably work as well.

We are needing mounting kit for our 1951 Willys Pickup. What do you suggest getting. We are getting ready to mount the grill hood and cab and box. Thank you for your help.
